Mark Hart
When Mark built a brick oven, he ignited a lifelong love of baking. Now specializing in artisan bread and Viennoiserie (laminated pastry, think croissants), Mark has served as a technical baker for an organic flour mill, where he acquired in-depth knowledge of ancient and organic grains, local milling, and recipe development. He also held the position of Head Baker and Manager at an acclaimed artisan bread and pastry shop. Mark has gained an extensive social media following with over 111K followers on his Instagram page, plus a large following on TikTok and YouTube.
Luis Cabral De Luna
Luis has been baking passionately since he was a little kid in Mexico. His high school job was baking in a commercial bakery. After studying Kinesiology at Western University, he became Mark’s apprentice, specializing in Sourdough & Viennoiserie. His training led him to work in Toronto at one of Canada's biggest artisanal bread manufacturing facilities – understanding high quality and the efficiency needed for massive bakery outputs.

Where We Are
We live and work in beautiful Chilliwack, British Columbia, on the traditional, ancestral and unceded territory of the Stó:lō Coast Salish peoples.
We travel nationwide for bakery consultations, and offer many online classes, and classes in person at our Chilliwack baking studio.
