Pasteis De Nata
DATES TBD> These dainty, custard tart is a hallmark of Portueguese baking. Learn to make these tarts from scratch, including the pastry, filling, and piping. They’re the perfect pocket of velvety deliciousness. For students who have taken Puff Pastry or have knowledge of the lamination process.

Puff Pastry
DATES TBD> This versatile pastry is the base for so many show-stopping favourites, like flakies, turnovers, puff tarts, and King’s Cake. Learn the basics of laminating and baking puff pastry to open a world of delicate treats.
1 evening. $85.
Authentic German Pretzels
DATES TBD> Achieve a plump, deep golden-brown pretzel with just enough salt chunks embedded in the crust. Is your mouth watering yet? Paired with a creamy mustard, these pretzels will complete any charcuterie spread or beer tasting event.
1 evening. $85
Fresh Homemade Pasta
DATES TBD> Once you’ve had the real deal, it’s hard to go back to dry, store-bought noodles! Learn to make the unique, unmistakable texture and flavour of handmade fresh pasta. Students will need to own a pasta roller, such as an Atlas or KitchenAid.

Baguettes
DATES TBD> The deep flavour and crispy crust of an authentic baguette can upstage any store-bought version. Come learn the art of combing both sourdough and yeast to achieve a loaf to compliment any picnic or meal.
1 full day. $95.
Montreal-Style Bagels
DATES TBD> There’s nothing like the authentic density and chewy texture of a Montreal-style bagel (and seedy tops? Heaven). Learn to make the world’s best bagels in our kitchen studio. Students will come home with a dozen bagels.

Sourdough 101
DATES TBD> Learn to nurture your sourdough culture, keep it happy, and bake photo-worthy loaves that look as delicious as they taste. This in-person class teaches you how to produce artisanal quality sourdough with your home oven.
2 days. $295
Sourdough 201
DATES TBD> Let’s raise your skills! Make high hydration sourdough, and play with a variety of whole grains, soakers, scalds, and more advanced levain builds. Learn the best techniques for adding cheese, nuts, seeds, dried fruit, garlic, olives, you name it. Open to students who have completed Sourdough 101 and experienced bakers.
3 days. $395
Lamination 101
DATES TBD> Want to achieve layers of buttery flakes in your own kitchen? This course teaches hand-rolled, professional-level lamination techniques so you can create croissants and pain au chocolat at home. Students will come home with plenty of pastries (and skills) to share.
2 days. $315
Lamination 201
DATES TBD> Take your skills to the next level with bicoloured croissants, kouign amann, morning buns, and pain Suisse. This course is specially designed for students who have taken Hand-Lamination 101 or have experience with lamination.
